Ingredients
1 cup oat flour
½ teaspoon baking powder
½ teaspoon cinnamon
¼ teaspoon salt
¼ cup coconut oil (melted)
¼ cup honey or maple syrup
1 egg
1 teaspoon vanilla extract
2 tablespoons coconut sugar
1 teaspoon cinnamon
Instructions
1. Whisk oat flour, baking powder, cinnamon, and salt.
2. Whisk melted coconut oil, honey/maple syrup, egg, and vanilla.
3. Combine wet and dry ingredients to form dough.
4. Scoop dough, roll into balls, and coat with cinnamon sugar.
5. Flatten slightly on baking sheet.
6. Bake at 350°F (175°C) for 10–12 minutes.
7. Cool on rack and enjoy!
Notes
Swap honey with maple syrup for vegan version.
Chill dough 10 minutes if sticky.
Store up to 1 week in fridge or 3 months in freezer.
