Description
Soft and healthy cinnamon roll blondies made with Greek yogurt and oat flour. These moist breakfast bars feature gooey cinnamon-honey swirls and a tender cake-like texture.
Ingredients
1/2 cup Greek yogurt
1/4 cup peanut butter or almond butter
2 tablespoons honey or maple syrup
1 egg
1 teaspoon vanilla extract
3/4 cup oat flour
1/2 teaspoon baking powder
Pinch of salt
2 tablespoons honey or maple syrup (for cinnamon swirl)
1 tablespoon coconut oil or melted butter
1 teaspoon cinnamon
2 tablespoons cream cheese (optional drizzle)
1 tablespoon Greek yogurt (for drizzle)
1 teaspoon honey (for drizzle)
Instructions
1. Preheat oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
2. In a mixing bowl whisk together Greek yogurt, peanut butter or almond butter, honey or maple syrup, egg, and vanilla extract until smooth.
3. Add oat flour, baking powder, and a pinch of salt and stir gently until a thick batter forms.
4. Spread the batter evenly into the prepared baking pan.
5. In a small bowl mix honey or maple syrup, melted coconut oil (or butter), and cinnamon to create the cinnamon swirl.
6. Drizzle the cinnamon mixture over the batter and use a knife or toothpick to swirl it through the blondies.
7. Bake for 18–22 minutes until the center is set and edges are lightly golden.
8. Allow the blondies to cool completely before slicing into bars.
9. Optional: mix cream cheese, Greek yogurt, and honey and drizzle over the top before serving.
Notes
Do not overbake the blondies to keep them soft and moist.
Use thick Greek yogurt for the best texture.
For extra cinnamon flavor add 1/4 teaspoon cinnamon directly to the batter.
Store blondies in an airtight container in the refrigerator for up to 5 days.
These bars freeze well for up to 2 months.
