Description

Cinnamon Pistachio Ricotta Scones are tender, buttery bakery-style scones made with creamy ricotta cheese, warm cinnamon, and crunchy pistachios. Perfect for breakfast, brunch, or afternoon tea, these moist scones are lightly sweet and finished with a simple vanilla glaze if desired.


Ingredients

2 cups all-purpose flour

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 cup cold unsalted butter, cubed

1 cup whole milk ricotta cheese

1 large egg

1 teaspoon vanilla extract

1/2 cup chopped pistachios

2 tablespoons heavy cream (for brushing)

Optional Vanilla Glaze:

1 cup powdered sugar

2 tablespoons milk

1/2 teaspoon vanilla extract


Instructions

1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

2. In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.

3. Cut the cold butter into the flour mixture until it resembles coarse crumbs.

4. In another bowl, whisk together the ricotta cheese, egg, and vanilla extract.

5. Add the wet ingredients to the dry ingredients and stir gently until almost combined.

6. Fold in the chopped pistachios until evenly distributed. Do not overmix.

7. Turn the dough onto a lightly floured surface and gently pat it into an 8-inch circle about 1 inch thick.

8. Cut into 8 wedges and place them on the prepared baking sheet, leaving space between each scone.

9. Brush the tops with heavy cream.

10. Bake for 18 to 22 minutes or until lightly golden.

11. Allow the scones to cool slightly before drizzling with the optional vanilla glaze and serving warm.

Notes

Keep the butter very cold for flaky, tender scones.

Avoid overmixing the dough to keep the texture light.

Toast the pistachios beforehand for even more flavor.

These scones are best enjoyed warm on the day they are baked but can be stored in an airtight container for up to 3 days.

Freeze baked scones for up to 2 months and reheat before serving.
