Description

Soft, chewy Cinnamon Coffee Crinkles with cocoa, cinnamon, and coffee for a cozy holiday cookie that belongs on every cookie tray.


Ingredients

Scale

1 cup oat flour (or all-purpose)

1/4 cup cocoa powder

1 teaspoon instant coffee

1 teaspoon cinnamon

1/2 teaspoon baking powder

1/4 teaspoon salt

1/3 cup coconut sugar or brown sugar

1/4 cup peanut butter or almond butter

1/3 cup Greek yogurt

1 egg

1 teaspoon vanilla extract

2–3 tablespoons powdered sugar (for rolling)


Instructions

1. Whisk together oat flour, cocoa powder, instant coffee, cinnamon, baking powder, and salt.

2. In another bowl, mix sugar, nut butter, yogurt, egg, and vanilla.

3. Combine wet and dry ingredients until a dough forms.

4. Chill dough for 30 minutes.

5. Scoop dough into balls, roll in powdered sugar.

6. Bake at 350°F for 10–12 minutes until crinkled.

Notes

For stronger coffee flavor, add 2 teaspoons instant coffee.

Chill dough well for best crinkle effect.

Store cookies in an airtight container for up to 5 days or freeze for 3 months.
