1 cup sour cream

For the Apple Layer:

2 medium apples, peeled and diced

2 tablespoons brown sugar

1 teaspoon ground cinnamon

For the Crumb Topping:

1 cup all-purpose flour

1/2 cup brown sugar

1 teaspoon ground cinnamon

1/2 cup unsalted butter, melted


Instructions

1. Preheat oven to 350°F (175°C). Grease a 9-inch square baking pan.

2. In a small bowl combine diced apples, brown sugar, and cinnamon. Set aside.

3. In a medium bowl whisk together flour, baking powder, baking soda, salt, and cinnamon.

4. In a large bowl beat butter and sugar until light and fluffy.

5. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.

6. Add dry ingredients alternately with sour cream and mix until just combined.

7. Spread batter evenly into the prepared baking pan.

8. Scatter the cinnamon apple mixture evenly over the batter.

9. For the crumb topping, mix flour, brown sugar, cinnamon, and melted butter until crumbly.

10. Sprinkle crumb mixture evenly over the apples.

11. Bake for 40 to 45 minutes or until a toothpick inserted in the center comes out clean.

12. Cool for at least 20 minutes before slicing and serving.

Notes

Honeycrisp, Granny Smith, Gala, or Fuji apples work best.

Do not overmix the batter to keep the cake tender.

For extra flavor add chopped pecans or walnuts to the crumb topping.

Store covered at room temperature for 2 days or refrigerate for up to 5 days.
