These Cinnamon and Apple Breakfast Biscuits are soft, protein-rich, and naturally gluten-free. Made with apple, cottage cheese, egg, almond flour, and cinnamon, they’re perfect for busy mornings and kid-friendly breakfasts.
Ingredients
3 tablespoons finely grated apple
¼ cup cottage cheese
1 large egg
3 tablespoons almond flour
1 teaspoon maple syrup
½ teaspoon ground cinnamon
½ teaspoon baking powder
Instructions
1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. Whisk cottage cheese and egg until mostly smooth.
3. Stir in grated apple, maple syrup, and cinnamon.
4. Fold in almond flour and baking powder until combined.
5. Scoop batter into small biscuit mounds and gently flatten.
6. Bake for 14–18 minutes until set and lightly golden.
7. Cool slightly before serving.
Notes
Use finely grated apple for best texture.
Do not overbake—biscuits should stay soft.
Great for meal prep and freezing.
