Description
A fluffy Christmas vanilla cake with almonds and mixed nuts, lightly spiced and perfect for festive coffee moments.
Ingredients
180 g all-purpose flour
100 g melted butter or sunflower oil
100 g brown sugar
2 large eggs
100 g mixed nuts
1 teaspoon vanilla extract
1 teaspoon baking powder
½ teaspoon ground cinnamon
Pinch of salt
80 ml milk
Instructions
1. Preheat oven to 170°C and line a cake pan.
2. Whisk eggs and sugar until pale.
3. Add melted butter and vanilla.
4. Mix dry ingredients separately.
5. Combine wet and dry ingredients with milk.
6. Fold in nuts.
7. Bake 40–45 minutes and cool before slicing.
Notes
Toast nuts for extra flavor.
Let cake cool completely before slicing.
Dust with powdered sugar for a festive look.
