3/4 cup (85g) natural unsweetened cocoa powder
1 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon salt
1 cup (224g) unsalted butter, room temperature
1 1/2 cups (310g) granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/4 cup granulated sugar (for rolling)
Instructions

2. In a bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
3. In a separate bowl, beat butter and granulated sugar until light and fluffy.
4. Add eggs one at a time, mixing well after each addition, then add vanilla extract.
5. Gradually mix dry ingredients into the wet ingredients until just combined.
6. Scoop dough into balls and roll each in granulated sugar.
7. Place on prepared baking sheets and bake for 10–12 minutes until edges are set and centers are soft.
8. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
Do not overbake—cookies will continue to set as they cool.
For extra flavor, add a pinch of espresso powder to the dough.
Cookies store well and stay soft for days.
