Description
These Chocolate Peanut Cottage Protein Muffins are fluffy, chocolatey, and packed with wholesome protein.
Ingredients
1 cup cottage cheese
1 cup rolled oats
2 large eggs
1/2 cup natural peanut butter
1/4 cup honey or maple syrup
1/2 cup cocoa powder
1 tsp vanilla extract
1 tsp baking powder
Pinch of salt
Instructions
1. Preheat oven to 350°F (175°C) and line muffin tin.
2. Blend all ingredients except cocoa powder until smooth.
3. Add cocoa powder and blend again.
4. Divide batter into muffin cups.
5. Bake for 18–20 minutes or until set.
6. Cool before serving.
Notes
Store in fridge for up to 5 days or freeze for 2 months. Add chocolate chips or crushed peanuts for extra flavor.
