Description

Ultra-moist zucchini bread loaded with chunks of chocolate peanut butter cups for a rich, cozy loaf no one can resist.


Ingredients

Scale

Dry Ingredients:

1½ cups all-purpose flour

½ cup cocoa powder

1 teaspoon baking soda

½ teaspoon baking powder

½ teaspoon salt

1 teaspoon cinnamon

Wet Ingredients:

½ cup vegetable oil or melted butter

¾ cup brown sugar

¼ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

Add-Ins:

1½ cups grated zucchini

1 cup chopped chocolate peanut butter cups

½ cup chocolate chips (optional)


Instructions

1. Preheat oven to 350°F (175°C) and prepare loaf pan.

2. Whisk dry ingredients in a bowl.

3. Mix wet ingredients in a large bowl.

4. Fold in grated zucchini.

5. Add dry ingredients and mix gently.

6. Fold in peanut butter cups and chocolate chips.

7. Pour into pan and bake 50–60 minutes.

8. Cool before slicing.

Notes

Do not squeeze zucchini.

Bread tastes even better the next day.

Tent with foil if browning too fast.
