Description
A nostalgic British chocolate cornflake traybake cake with chewy baked texture and rich glossy chocolate icing.
Ingredients
150g cornflakes lightly crushed
150g self raising flour
150g caster sugar
150g unsalted butter melted
2 large eggs
2 tablespoons cocoa powder
1 teaspoon vanilla extract
2 tablespoons milk
200g icing sugar
2 tablespoons cocoa powder for icing
3 to 4 tablespoons milk for icing
1 tablespoon melted butter for icing
Instructions
1. Preheat oven to 180C and line a traybake tin with parchment.
2. Lightly crush the cornflakes and set aside.
3. Whisk melted butter sugar eggs and vanilla until smooth.
4. Sift flour and cocoa powder then fold into the mixture.
5. Stir in the crushed cornflakes.
6. Add milk and mix gently to combine.
7. Spread batter into the tray and bake 20 to 25 minutes.
8. Cool completely before icing.
9. Mix icing ingredients until smooth then spread over the cake and allow to set before slicing.
Notes
Do not crush cornflakes too finely to keep texture.
Allow cake to cool fully before icing.
Store in an airtight container up to 4 days.
