Description

A moist, fluffy Healthy Chocolate Chip Oatmeal Banana Bread made with whole-grain oat flour, ripe bananas, and melty chocolate chips. Egg-free, wholesome, and perfect for breakfast or snacking.


Ingredients

2 cups oat flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon cinnamon

1/4 teaspoon salt

3 ripe bananas, mashed

1/2 cup plain Greek yogurt

1/4 cup maple syrup or honey

2 tablespoons melted coconut oil

1 teaspoon vanilla extract

1/3 cup dark chocolate chips


Instructions

1. Preheat the oven to 350°F (175°C) and prepare a 9×5-inch loaf pan.

2. Whisk together the oat flour, baking powder, baking soda, cinnamon, and salt.

3. Mix the mashed bananas, Greek yogurt, maple syrup, coconut oil, and vanilla.

4. Fold the wet ingredients into the dry ingredients until just combined.

5. Gently stir in the chocolate chips.

6. Pour the batter into the pan and bake for 45–55 minutes.

7. Cool before slicing and serving.

Notes

Use very ripe bananas for the best flavor.

Do not overmix the batter.

Store leftovers in an airtight container or freeze individual slices.
