Chewy oatmeal cookie bars layered with gooey caramel and rich melted chocolate for the ultimate cozy bakery-style dessert.
Ingredients
1 cup unsalted butter, softened
1 cup brown sugar
1/2 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
2 cups rolled oats
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup chocolate chips
Caramel layer:
11 oz caramel candies
1/4 cup heavy cream

3. Line a 9×13 baking pan with parchment paper
4. In a large bowl cream butter, brown sugar, and granulated sugar until fluffy
5. Add eggs and vanilla extract and mix well
6. In another bowl whisk oats, flour, baking soda, and salt
7. Gradually combine dry ingredients into wet mixture
8. Press about two-thirds of dough into prepared baking pan
9. In saucepan melt caramel candies with heavy cream until smooth
10. Pour caramel evenly over dough layer
11. Sprinkle chocolate chips over caramel
12. Crumble remaining dough on top
13. Bake for 25–30 minutes until golden brown and edges are set

Do not overbake for gooey chewy texture
Let bars cool fully before cutting for clean slices
Add flaky sea salt on top for extra flavor
