Description
A chewy Australian chocolate coconut slice made with crushed Weet-Bix and topped with rich chocolate icing.
Ingredients
8 Weet-Bix biscuits, crushed
1 cup desiccated coconut
1 cup self-rising flour
1/2 cup cocoa powder
3/4 cup brown sugar
150 g unsalted butter, melted
1 tsp vanilla extract
1 large egg
1 1/2 cups powdered sugar
2 tbsp cocoa powder
1 tbsp melted butter
2–3 tbsp boiling water
Instructions
1. Preheat oven to 175ยฐC
2. Mix dry ingredients
3. Add wet ingredients and combine
4. Press mixture into baking pan
5. Bake 18-22 minutes
6. Prepare chocolate icing
7. Spread icing over slice
8. Sprinkle coconut on top
9. Cool before slicing
