Description

Soft, chewy brown sugar cookies flavored with maple syrup and cinnamon, rolled in cinnamon sugar and finished with a light maple glaze, for the taste of French toast in cookie form.

Ingredients

Scale

For the cookies: 1/2 cup (113 g) unsalted butter, softened

1/2 cup (100 g) packed light brown sugar

1/4 cup (50 g) granulated sugar

1 large egg

1/4 cup (60 ml) pure maple syrup

1 teaspoon vanilla extract

1 1/2 cups (190 g) all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

2 teaspoons ground cinnamon

For rolling: 1/4 cup granulated sugar mixed with 1 teaspoon ground cinnamon

For the glaze: 1/2 cup powdered sugar, 1 tablespoon maple syrup and 1 teaspoon milk

Instructions

1. In a bowl, whisk the flour, baking soda, salt and 2 teaspoons cinnamon together.

2. In a large bowl, beat the softened butter with the brown sugar and 1/4 cup granulated sugar until creamy, about 2 minutes.

3. Beat in the egg, maple syrup and vanilla until combined.

4. Add the dry ingredients and mix just until a soft dough forms. Chill the dough for 30 minutes.

5. Preheat the oven to 350°F and line two baking sheets with parchment paper.

6. Mix the rolling sugar and cinnamon in a shallow bowl. Scoop the dough into 1 1/2 tablespoon balls and roll each one in the cinnamon sugar.

7. Place the balls 2 inches apart on the baking sheets and bake for 10 to 12 minutes, until the edges are set and the centers still look soft.

8. Cool on the pan for 5 minutes, then move to a wire rack.

9. Whisk the powdered sugar, maple syrup and milk into a thick glaze. Drizzle over the cooled cookies and let set for 10 minutes.

Notes

No source with exact amounts could be opened. This recipe follows the common French toast cookie method (creamed butter and brown sugar, egg, maple syrup, cinnamon, 350°F for 10 to 12 minutes) with amounts developed for Poulef. It is untested, so test the first batch.

Chilling is not stated in the sources and was added to help the cookies stay thick and chewy.
