Description
A moist and wholesome carrot raisin oatmeal yogurt cake naturally sweetened with maple syrup.
Ingredients
1 1/2 cups oat flour
1 cup grated carrots
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/3 cup maple syrup or honey
2 eggs
1/2 cup Greek yogurt
1/4 cup melted coconut oil
1 tsp vanilla extract
1/3 cup raisins
Instructions
1. Preheat oven to 350°F
2. Mix oat flour baking powder baking soda salt and cinnamon
3. Whisk eggs maple syrup yogurt oil and vanilla
4. Combine wet and dry ingredients
5. Fold in carrots and raisins
6. Pour batter into pan
7. Bake 30 to 35 minutes
8. Cool before slicing
Notes
Use freshly grated carrots
Do not overmix batter
Add walnuts for extra crunch
