Description
A moist carrot pistachio cake made with no flour and no sugar, topped with a creamy glaze and crushed pistachios.
Ingredients
1 cup grated carrots
1 cup ground pistachios
2 eggs
1/2 cup dates or banana
1/2 cup yogurt
1 tsp cinnamon
1/2 tsp baking powder
pinch salt
1/2 cup yogurt or cream cheese
2โ3 tbsp honey
1โ2 tbsp milk
Instructions
1. Preheat oven and prepare pan.
2. Mix wet ingredients.
3. Add dry ingredients and combine.
4. Fold in carrots.
5. Bake for 30โ40 minutes.
6. Cool completely.
7. Prepare glaze and spread on cake.
8. Top with crushed pistachios.
Notes
Let cake cool before glazing. Adjust glaze thickness as needed. Use finely ground pistachios.
