Ingredients
1 cup grated carrots
1 cup cottage cheese
2 large eggs
2 tablespoons honey or maple syrup
1 cup all-purpose or whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
2 tablespoons melted butter or oil
Pinch of salt
Optional:
Chopped walnuts or pecans
Raisins
Orange zest
Chocolate chips
Instructions
1. Preheat oven to 350ยฐF (175ยฐC) and line or grease a muffin tin
2. In a mixing bowl, whisk together cottage cheese, eggs, honey, and melted butter until smooth
3. Stir in the grated carrots
4. In another bowl, combine flour, baking powder, baking soda, cinnamon, and salt
5. Add the dry ingredients to the wet ingredients and mix gently until just combined
6. Do not overmix to keep muffins soft and fluffy
7. Divide the batter evenly into the muffin cups
8. Bake for 18 to 22 minutes until golden and a toothpick inserted comes out clean
9. Remove from oven and let cool for a few minutes before serving
10. Enjoy warm or at room temperature
