Chewy, nutty, and naturally sweet carrot cake energy bites that are gluten-free, vegan, dairy-free, and no-bake. Perfect for snacking anytime!
Ingredients
1 cup shredded carrots
1 cup pitted Medjool dates
1 cup rolled oats
½ cup almond flour
½ cup chopped walnuts or pecans
2 tablespoons chia seeds
2 tablespoons maple syrup
1 teaspoon vanilla extract
1 teaspoon cinnamon
½ teaspoon nutmeg
Pinch of salt
Instructions
1. Wash, peel, and shred the carrots.
2. In a food processor, combine carrots, dates, oats, almond flour, and nuts. Pulse until finely chopped and sticky.
3. Add maple syrup, vanilla, cinnamon, nutmeg, and salt. Pulse until fully combined.
4. Transfer to a bowl and stir in chia seeds by hand.
5. Roll mixture into 1-inch balls and place on a baking sheet or plate.
6. Refrigerate for 20–30 minutes to firm up.
7. Serve and enjoy!
Notes
Use soft Medjool dates for best texture.
Shred carrots finely to avoid a gritty bite.
Chill the mixture to make rolling easier.
Customize spice levels with extra cinnamon or nutmeg.
