Description

These carrot cake energy balls are made with just six ingredients and taste just like classic carrot cake. Vegan, gluten-free, naturally sweetened, and perfect for a quick healthy snack or guilt-free treat.


Ingredients

1 cup finely grated carrots

1 cup rolled oats (gluten-free if needed)

1/2 cup almond butter or cashew butter

1/4 cup maple syrup

1 teaspoon ground cinnamon

1/2 cup unsweetened shredded coconut


Instructions

1. Add grated carrots, rolled oats, almond butter, maple syrup, cinnamon, and shredded coconut to a mixing bowl.

2. Stir until the mixture is well combined and sticky.

3. If the mixture is too wet, add a tablespoon of oats; if too dry, add a little more maple syrup.

4. Roll the mixture into bite-sized balls using your hands.

5. Place energy balls on a plate or baking sheet.

6. Chill in the refrigerator for 20–30 minutes to firm up before serving.

Notes

Finely grate carrots for the best texture.
