These Carrot Cake Cottage Cheese Breakfast Cookies are soft, protein-packed, and naturally sweetened with honey. Filled with grated carrots, oats, and warm cinnamon, they’re perfect for busy mornings or healthy snacks.
Ingredients
1 cup cottage cheese
1 cup grated carrots
½ cup rolled oats
½ cup almond flour
¼ cup honey
¼ cup walnuts, chopped
1 large egg
1 teaspoon cinnamon
½ teaspoon baking powder
¼ teaspoon salt
1 teaspoon vanilla extract
Instructions
1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a large bowl, mix cottage cheese, honey, egg, vanilla extract, and grated carrots.
3. Add oats, almond flour, cinnamon, baking powder, salt, and walnuts.
4. Stir until fully combined.
5. Scoop dough onto baking sheet and gently flatten.
6. Bake for 16–18 minutes until set.
7. Cool slightly before serving.
Notes
For smoother texture, blend cottage cheese before mixing.
Do not overbake to keep cookies soft.
Store refrigerated for best freshness.
