Ingredients
2 cups grated carrots (about 4 medium carrots)
1 cup peeled and diced apples (about 1 large apple)

1 cup packed brown sugar
1/2 cup granulated sugar
1/2 cup unsalted butter, melted
2 large eggs
1 teaspoon vanilla extract
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
For the Vanilla Sauce:
1/2 cup unsalted butter
1 cup heavy cream
1/2 cup granulated sugar
1 teaspoon vanilla extract

Instructions
1. Preheat the oven to 350°F (175°C) and grease an 8×8-inch baking dish.
2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
3. In a large bowl, whisk together the brown sugar, granulated sugar, melted butter, eggs, and vanilla extract until smooth.
4. Fold in the grated carrots and diced apples.
5. Gradually stir the dry ingredients into the wet mixture until just combined.
6. Pour the batter into the prepared baking dish and spread evenly.
7. Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean.
8. While the pudding bakes, combine the butter, heavy cream, granulated sugar, and salt in a saucepan over medium heat. Stir until smooth and simmer gently for 3–5 minutes. Remove from the heat and stir in the vanilla extract.
9. Allow the pudding to cool for 10 minutes before serving.
10. Serve warm with generous spoonfuls of the warm vanilla sauce over each portion.
