Description

A moist apple cake filled with caramelized apples, topped with homemade vanilla custard sauce and crunchy cinnamon toffee crumble.


Ingredients

Apple Cake:

2 large apples, peeled and diced

2 cups all-purpose flour

2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/2 cup butter

1 cup sugar

2 eggs

1 teaspoon vanilla

1/2 cup buttermilk

Custard:

2 cups milk

4 egg yolks

1/3 cup sugar

2 tablespoons cornstarch

1 teaspoon vanilla

1 tablespoon butter

Crumble:

1/2 cup brown sugar

1/2 cup flour

1/4 cup butter

1/2 teaspoon cinnamon


Instructions

1. Preheat oven to 350°F and prepare a 9-inch cake pan.

2. Lightly caramelize the apples in butter.

3. Prepare the cake batter and fold in the apples.

4. Bake for 40–45 minutes.

5. Cook the homemade custard until thick and silky.

6. Bake the cinnamon crumble until golden.

7. Serve warm cake with custard and crumble.

Notes

Use firm apples for the best texture.

Serve warm with vanilla ice cream if desired.

Store custard separately from the cake.
