These Caramel Chocolate Oatmeal Bars are chewy, buttery, and packed with layers of rich caramel and melted chocolate. A perfect dessert for holidays, bake sales, or anytime you need a sweet treat.
Ingredients
1 cup unsalted butter, melted
1 cup brown sugar, packed
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
3 cups rolled oats
1 teaspoon baking soda
1/2 teaspoon salt
14 oz soft caramels
1/3 cup heavy cream
2 cups semisweet chocolate chips
Instructions
1. Preheat oven to 350°F (175°C) and line a 9×13 baking dish with parchment.
2. Whisk melted butter with sugars, then beat in eggs and vanilla.
3. Add flour, oats, baking soda, and salt. Mix gently.
4. Press half into dish and bake 10 minutes.
5. Melt caramels with cream in a saucepan until smooth.
6. Sprinkle chocolate chips on crust, pour caramel, and top with remaining oat mixture.
7. Bake 20–25 minutes until golden. Cool fully before cutting.
Notes
Cool completely before slicing for neat bars.
These bars freeze beautifully—wrap tightly and store up to 3 months.
