Description
Soft buttery lemon cookie bars topped with a silky lemon glaze. A bright citrus dessert perfect for spring and summer baking.
Ingredients
1 cup unsalted butter
1 cup granulated sugar
2 eggs
1 tsp vanilla extract
2 tbsp lemon zest
2 tbsp lemon juice
2 1/2 cups flour
1/2 tsp baking powder
1/2 tsp salt
Lemon Glaze
1 1/2 cups powdered sugar
3 tbsp lemon juice
1 tsp lemon zest
1 tbsp melted butter
Instructions
1. Preheat oven to 350°F.
2. Cream butter and sugar until fluffy.
3. Add eggs, vanilla, lemon zest and juice.
4. Mix dry ingredients separately.
5. Combine mixtures to form dough.
6. Press dough into lined pan.
7. Bake 20-25 minutes.
8. Prepare glaze and spread over bars.
9. Cool and slice.
Notes
Use fresh lemon juice for best flavor.
Do not overbake to keep bars soft.
Allow glaze to set before slicing.
