Description
Soft lemon zest cookies made with cream for a tender crumb and bright citrus flavor.
Ingredients
200g cream
3 tablespoons sugar
2 tablespoons butter or margarine
Zest of 1 lemon
1 teaspoon vanilla essence
1 teaspoon baking powder
About 2 1/2 cups wheat flour
Instructions
1. Preheat oven to 350°F.
2. Mix cream, sugar and butter until smooth.
3. Add lemon zest and vanilla.
4. Mix in baking powder.
5. Gradually add flour until dough is soft and workable.
6. Shape small balls and place on baking tray.
7. Flatten slightly and bake 15 to 18 minutes.
Notes
Do not overbake to keep cookies soft.
Add powdered sugar glaze if desired.
Fresh lemon zest gives best flavor.
