Ingredients
1 cup unsalted butter, softened
8 oz cream cheese, softened
2 cups granulated sugar
4 large eggs
2½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
1 teaspoon vanilla extract
1½ cups toasted pecans, chopped
Instructions
1. Preheat oven to 325°F and prepare loaf pan.
2. Cream butter and cream cheese until smooth.
3. Add sugar and beat until fluffy.
4. Add eggs one at a time.
5. Whisk dry ingredients separately.
6. Add dry ingredients gradually.
7. Stir in vanilla and fold in pecans.
8. Bake 65–75 minutes.
9. Cool before slicing.
