These irresistible Brownie Muffin Bites are rich, fudgy, and baked to perfection in bite-sized form. Ideal for parties, picnics, or a quick chocolate fix.
Ingredients
2 boxes brownie mix
Additional eggs as called for on the brownie mix (plus 1 extra egg)
Ingredients required by the brownie mix (usually oil and water)
Nonstick cooking spray
Instructions
1. Preheat oven to 350°F (175°C) and spray mini muffin tin with nonstick spray.
2. Prepare brownie batter according to box directions, adding one extra egg.
3. Fill each muffin cup two-thirds full with batter.
4. Bake for 12–15 minutes or until tops are set.
5. Cool in pan for 5 minutes, then transfer to cooling rack.
Notes
For extra fudgy centers, slightly underbake by a minute or two.
Store in an airtight container at room temperature for up to 3 days.
