Ingredients
1 cup unsalted butter, melted
2 cups light brown sugar, packed
2 large eggs
2 teaspoons vanilla extract
1 ¾ cups all-purpose flour
½ teaspoon baking powder
½ teaspoon salt
1 ½ cups toasted pecans, roughly chopped
Instructions
1. Preheat oven to 350°F (175°C). Line a 9×13-inch pan with parchment paper.
2. Toast the pecans on a baking sheet for 6–8 minutes until fragrant, then let cool.
3. In a large bowl, whisk together melted butter and brown sugar until smooth.
4. Add eggs and vanilla extract, whisking until creamy and glossy.
5. In a separate bowl, whisk flour, baking powder, and salt.
6. Fold the dry ingredients into the wet mixture until just combined — do not overmix.
7. Add the toasted, chopped pecans and fold gently into the batter.
8. Spread the batter evenly into the prepared pan.
9. Bake for 25–30 minutes or until the edges are golden brown and the center is just set.
10. Cool completely in the pan before slicing into squares and serving.
Notes
For extra richness, add ½ cup white chocolate chips or drizzle with caramel sauce after baking.
Use dark brown sugar for a deeper molasses flavor.
Don’t overbake — the blondies should be slightly gooey in the center.
