Description
Flourless blueberry cottage cheese protein muffins that are naturally sweet and high in protein.
Ingredients
2 cups cottage cheese
2 cups fresh blueberries
4 large eggs
1/4 cup honey or maple syrup
1 tsp vanilla extract
1 tsp baking powder
1/2 tsp cinnamon
Instructions
1. Preheat oven to 175°C
2. Blend cottage cheese, eggs, honey, vanilla, baking powder, and cinnamon
3. Fold in blueberries
4. Fill muffin liners evenly
5. Top with extra blueberries if desired
6. Bake 22-25 minutes
7. Cool before serving
