Description
Fudgy, moist bars made with grated beets, cocoa, oat flour, eggs, and orange zest, lightly sweetened with honey and topped with chopped hazelnuts, with no wheat flour and no white sugar.
Ingredients
1 1/2 cups (about 250 g) finely grated raw beets (about 2 medium beets, peeled)
3 large eggs
1/3 cup (80 ml) neutral oil
1/3 cup (115 g) honey or maple syrup
1/4 cup (60 ml) fresh orange juice
1 tablespoon orange zest
1 teaspoon vanilla extract
1 1/4 cups (115 g) oat flour (rolled oats ground to a fine flour)
1/3 cup (35 g) unsweetened cocoa powder
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup (60 g) chopped hazelnuts, divided
Instructions
1. Preheat the oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper, leaving an overhang on two sides.
2. In a large bowl, whisk the eggs, oil, honey, orange juice, orange zest, and vanilla until smooth.
3. Stir in the grated beets.
4. In a separate bowl, whisk the oat flour, cocoa powder, baking powder, and salt. Add to the wet ingredients and stir until just combined. Fold in half of the chopped hazelnuts.
5. Spread the thick batter evenly in the pan and sprinkle with the remaining hazelnuts.
6. Bake for 30 to 35 minutes, until the center is set and a toothpick inserted in the middle comes out with a few moist crumbs.
7. Cool completely in the pan. Lift out using the parchment and cut into 16 bars.
Notes
Original Poulef recipe adapted from published beetroot and orange chocolate desserts (such as the No-Bake Beetroot Orange Chocolate Tart on Origin Magazine and the flourless chocolate beet cake on Poulef) and shaped to match the baked bars in the photos. The amounts, oven temperature, and bake time are estimates, and the recipe has not been tested.
Contains no wheat flour or white sugar, but it uses oat flour and honey, so it is not a no-flour or no-sugar recipe. Use certified gluten-free oats if you need it gluten-free.
Grate the beets finely so they melt into the batter.
