Description
Soft and moist banana yogurt oat cake made with wholesome oats, ripe bananas, and creamy Greek yogurt for a cozy healthy treat. Naturally sweetened, fluffy, and perfect for breakfast, snacking, or a guilt-free dessert.
Ingredients
2 cups rolled oats
3 ripe bananas
1 cup plain Greek yogurt
2 large eggs
1/4 cup honey or maple syrup
1 tsp vanilla extract
1 tsp baking powder
1 tsp cinnamon
1/4 tsp salt
Optional: 1/4 cup chopped walnuts or chocolate chips
Instructions
1. Preheat oven to 350°F (175°C) and grease an 8-inch baking pan.
2. Blend rolled oats in a blender until they resemble oat flour.
3. Mash bananas in a large bowl until smooth.
4. Whisk in Greek yogurt, eggs, honey, and vanilla extract.
5. Add blended oats, baking powder, cinnamon, and salt.
6. Mix until fully combined.
7. Fold in walnuts or chocolate chips if using.
8. Pour batter into prepared pan and smooth the top evenly.
9. Bake for 30–35 minutes until golden and center is set.
10. Cool for 10–15 minutes before slicing and serving.
Notes
Use very ripe bananas for the sweetest flavor.
Do not overmix the batter for softer texture.
Cake tastes amazing warm or chilled from the fridge.
Store leftovers refrigerated for up to 4 days.
