3 cups all-purpose flour

1 cup sour cream

3 ripe bananas, mashed

8 ounces cream cheese, softened

1 cup heavy whipping cream

1/2 cup powdered sugar

2 teaspoons vanilla extract

For Garnish:

Toasted chopped walnuts

Powdered sugar

Instructions

1. Preheat the oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.

2. Whisk together the flour, baking powder, baking soda, salt, and cinnamon in a medium bowl.

3. In a large bowl, beat the butter and sugar until light and fluffy, about 4 to 5 minutes.

4. Add the eggs one at a time, beating well after each addition, then mix in the vanilla extract.

5. Beat in the sour cream and mashed bananas until smooth.

6. Gradually add the dry ingredients and mix until just combined. Fold in the toasted walnuts.

7. Divide the batter evenly between the prepared cake pans and bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean. Cool completely.

8. For the filling, beat the cream cheese, powdered sugar, and vanilla until smooth. In a separate bowl, whip the heavy cream to stiff peaks, then gently fold it into the cream cheese mixture.

9. Place one cake layer on a serving plate, spread with half of the vanilla cream filling, top with the second cake layer, and spread the remaining cream over the top.

10. Garnish with toasted walnuts, a light dusting of powdered sugar, and banana slices if desired. Chill for at least 1 hour before serving.

Notes

Use very ripe bananas for the sweetest flavor and moistest cake.

Toast the walnuts before adding them for extra crunch and deeper flavor.
