Ingredients

Scale

2 ripe bananas, mashed

1 cup cottage cheese

2 large eggs

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1½ cups oat flour or all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon (optional)

Pinch of salt

Instructions

1. Preheat oven to 350°F (175°C) and prepare a 12-cup muffin tin.

2. Whisk together mashed bananas, cottage cheese, eggs, honey, and vanilla.

3. Mix in oat flour, baking powder, baking soda, cinnamon, and salt until just combined.

4. Fold in any optional add-ins.

5. Divide batter evenly among muffin cups.

6. Bake for 20–25 minutes until golden and a toothpick comes out clean.

7. Cool for 5 minutes before transferring to a wire rack.

Notes

Use extra-ripe bananas for the sweetest flavor.

Blend cottage cheese for a smoother texture if preferred.
