Description

A moist, tender banana quick bread with brown sugar, cinnamon, a generous cup of dark and golden raisins, and crunchy chopped walnuts, baked in a loaf pan.

Ingredients

Scale

3 large very ripe bananas, mashed (about 1 1/2 cups)

2 large eggs

1/4 cup vegetable oil

1 teaspoon vanilla extract

2 cups (250 g) all-purpose flour

1/2 cup (100 g) packed brown sugar

1 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 cup dark raisins

1/2 cup golden raisins

1/2 cup chopped walnuts

1 tablespoon all-purpose flour, for tossing the raisins and walnuts

Instructions

1. Preheat the oven to 350°F. Grease an 8×4-inch loaf pan, or line it with parchment paper.

2. In a large bowl, mash the bananas until mostly smooth. Whisk in the eggs, oil, and vanilla.

3. In a separate bowl, whisk together the flour, brown sugar, baking soda, salt, and cinnamon. Stir the dry ingredients into the banana mixture just until combined.

4. Toss the dark raisins, golden raisins, and walnuts with the 1 tablespoon of flour, then fold them into the batter.

5. Pour the batter into the prepared pan and let it rest for 10 minutes.

6. Bake for 55 to 60 minutes, until a toothpick inserted in the center comes out clean.

7. Cool in the pan for 10 minutes, then turn out onto a wire rack and cool completely before slicing.

Notes

Built from the common banana raisin bread formula shared by several published recipes (3 ripe bananas, 2 eggs, 1/4 cup oil, 2 cups flour, 1/2 cup brown sugar, baking soda, salt, cinnamon, 1 cup raisins; 350°F; 55 to 60 minutes in an 8×4 pan), with a mix of dark and golden raisins and 1/2 cup chopped walnuts added to match the photos. Amounts were adapted for Poulef and not tested, so check the loaf early. The walnut amount, prep time and yield are estimates.

Tossing the raisins and walnuts in flour helps keep them from sinking.

Nutrition is an approximate estimate per slice (10 slices).
