Description

Soft banana yogurt squares with crunchy pistachios, perfect for breakfast, snacks, or dessert.


Ingredients

2 ripe bananas mashed

2 eggs

1/2 cup sugar

1/2 cup plain yogurt

1/3 cup vegetable oil

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup chopped pistachios


Instructions

1. Preheat oven to 350°F and line an 8×8 baking pan with parchment paper.

2. Mash bananas in a large bowl.

3. Add eggs, sugar, yogurt, oil and vanilla and mix well.

4. In another bowl combine flour, baking powder, baking soda and salt.

5. Fold dry ingredients into banana mixture until combined.

6. Stir in chopped pistachios.

7. Pour batter into prepared pan and spread evenly.

8. Bake for 30 to 35 minutes until a toothpick comes out clean.

9. Cool completely before slicing into squares.

Notes

Use very ripe bananas for best sweetness.

Toast pistachios for deeper flavor.

Store in airtight container for several days.
