Description

Sweet, protein-packed Banana Oat Cottage Cheese Mini Muffins – kid-friendly, gluten-free, and naturally sweetened.


Ingredients

1 cup cottage cheese

2 ripe bananas, mashed

2 large eggs

1 cup rolled oats

2 tbsp honey or maple syrup (optional)

1 tsp baking powder

½ tsp cinnamon

Pinch of salt


Instructions

1. Preheat oven to 350°F (175°C) and line a mini muffin tin.

2. Mash bananas until smooth.

3. Mix cottage cheese, eggs, and honey with bananas.

4. Stir in oats, baking powder, cinnamon, and salt.

5. Spoon into muffin tin, filling ¾ full.

6. Bake 15–18 minutes until a toothpick comes out clean.

Notes

Store in the fridge up to 5 days or freeze up to 2 months.

Use gluten-free oats if needed.

Add chocolate chips or blueberries for variation.
