This Banana & Fruit Sticky Loaf is soft, sweet, and bursting with juicy fruit — like banana bread got a fruity upgrade! Moist, golden, and full of natural sweetness, it’s the kind of loaf that disappears fast. A glossy honey glaze on top makes it truly irresistible.
Ingredients
3 ripe bananas (mashed)
½ cup (120 ml) vegetable oil
½ cup (100 g) brown sugar
¼ cup (50 g) granulated sugar
2 large eggs
1 tsp vanilla extract
1 ½ cups (190 g) all-purpose flour
1 tsp baking soda
½ tsp baking powder
½ tsp salt
1 tsp cinnamon
½ cup (80 g) chopped dried apricots
½ cup (80 g) raisins or sultanas
½ cup (80 g) chopped dried pineapple or mango
Zest of 1 orange
For the Sticky Glaze:
3 tbsp honey or golden syrup
1 tbsp brown sugar
1 tbsp butter
Instructions
1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan. Line it with parchment paper for easy removal.
2. In a large mixing bowl, mash the bananas until smooth. Whisk in the oil, brown sugar, granulated sugar, eggs, and vanilla extract until combined.
3. In another bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
4. Gradually add the dry ingredients to the wet ingredients. Mix until just combined — don’t overmix!
5. Fold in the dried apricots, raisins, dried pineapple (or mango), and orange zest until evenly distributed.
6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
7. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
8. While the loaf is baking, prepare the sticky glaze: In a small saucepan, combine honey (or golden syrup), brown sugar, and butter. Heat gently until melted and smooth.
9. Once the loaf is baked, remove it from the oven and let it cool for 10 minutes. Brush the warm glaze evenly over the top to create that glossy, sticky finish.
10. Let the loaf cool completely before slicing. Enjoy warm or at room temperature!
Notes
• Use very ripe bananas — the more spots, the better the flavor!
• Substitute nuts or chocolate chips for dried fruit if preferred.
• Brush the glaze while the loaf is still warm so it absorbs perfectly.
• Store at room temperature for 3 days or in the fridge for up to a week.
• To freeze: Slice and wrap individually, then reheat in the toaster or microwave.
