Description
Soft banana foster upside-down muffins with gooey caramelized bananas baked on top.
Ingredients
For topping:
3 bananas, sliced
1/4 cup melted butter
1/2 cup brown sugar
1 tsp cinnamon
For muffins:
1 1/2 cups flour
1 tsp baking powder
1/2 tsp baking soda
pinch salt
1/2 tsp cinnamon
2 ripe bananas, mashed
1/2 cup brown sugar
1/3 cup melted butter
2 eggs
1 tsp vanilla
1/4 cup milk
Instructions
1. Preheat oven and grease muffin pan.
2. Prepare caramel banana topping.
3. Place bananas into muffin cups.
4. Mix muffin batter.
5. Fill muffin cups over topping.
6. Bake for 18–22 minutes.
7. Flip muffins while warm.
8. Serve warm.
Notes
Flip muffins while warm for easiest release. Use ripe bananas for best flavor.
