Description

Healthy Banana Cinnamon Greek Yogurt Muffins with oat flour and gooey chocolate centers. Moist, naturally sweetened, and perfect for breakfast or healthy snacks.


Ingredients

Scale

2 ripe bananas, mashed

1/2 cup Greek yogurt

1/4 cup honey or maple syrup

1 large egg

1 teaspoon vanilla extract

1 cup oat flour

1 teaspoon cinnamon

Chocolate chunks

1/2 teaspoon baking powder

Pinch of salt


Instructions

1. Preheat oven to 350°F (175°C).

2. Mash bananas and mix with Greek yogurt, honey, egg, and vanilla.

3. Add oat flour, cinnamon, baking powder, and salt.

4. Fill muffin cups halfway, add a chocolate chunk, then top with more batter.

5. Bake for 18–22 minutes.

6. Cool slightly before serving.

Notes

Use ripe bananas for natural sweetness.

Freeze chocolate chunks for a gooey center.

Store refrigerated for up to 5 days or freeze for up to 3 months.
