Description
A thick, moist Banana Cinnamon Greek Yogurt Coffee Cake made with oat flour, ripe bananas, creamy Greek yogurt, and topped with a buttery cinnamon crumb. A wholesome breakfast or snack everyone will love.
Ingredients
2 ripe bananas, mashed
1/2 cup Greek yogurt
1/4 cup honey or maple syrup
1 egg
1 teaspoon vanilla extract
1 cup oat flour
1 teaspoon cinnamon
1/2 teaspoon baking powder
Pinch of salt
Crumb Topping:
1/4 cup oat flour
2 tablespoons coconut sugar or brown sugar
1 teaspoon cinnamon
2 tablespoons melted butter or coconut oil
Instructions
1. Preheat the oven to 350°F (175°C) and prepare an 8×8-inch baking pan.
2. Whisk together the mashed bananas, Greek yogurt, honey, egg, and vanilla.
3. Mix in the oat flour, cinnamon, baking powder, and salt until just combined.
4. Prepare the crumb topping by mixing the oat flour, sugar, cinnamon, and melted butter until crumbly.
5. Spread the batter evenly into the pan.
6. Sprinkle the crumb topping over the batter.
7. Bake for 30–35 minutes until golden and a toothpick comes out with a few moist crumbs. Cool before slicing.
Notes
Use extra-ripe bananas for maximum sweetness.
Do not overmix the batter.
Chill the crumb topping before baking for larger crumbs.
Store refrigerated for up to 6 days or freeze for up to 3 months.
