Description

Soft Banana Cinnamon Greek Yogurt Breakfast Cookies made with ripe bananas, oats, Greek yogurt, cinnamon, and chocolate chips. Perfect for breakfast or healthy snacking.


Ingredients

Scale

2 ripe bananas, mashed

1/2 cup Greek yogurt

2 tablespoons honey or maple syrup

1 large egg

1 teaspoon vanilla extract

1 cup oats

1 teaspoon cinnamon

1/4 cup chocolate chips

1/2 teaspoon baking powder

Pinch of salt


Instructions

1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

2. Mash the bananas.

3. Mix in the Greek yogurt, honey, egg, and vanilla.

4. Add the oats, cinnamon, baking powder, and salt.

5. Fold in the chocolate chips.

6. Scoop onto the baking sheet and flatten slightly.

7. Bake for 12–15 minutes and cool before serving.

Notes

Use ripe bananas for maximum sweetness.

Do not overbake if you want soft centers.

Store in the refrigerator for up to 5 days.
