These banana bread cottage cheese breakfast nuggets are soft, protein-packed, and perfect for busy mornings or snacks.
Ingredients
1 cup cottage cheese
1 ripe banana, mashed
1 cup rolled oats
1/2 teaspoon baking powder
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/4 cup chopped walnuts (optional)
1/4 cup chocolate chips (optional)
Instructions
1. Preheat oven to 350°F and line a baking sheet.
2. Blend cottage cheese, banana, oats, baking powder, vanilla, and cinnamon.
3. Fold in walnuts or chocolate chips if using.
4. Scoop tablespoon-sized mounds onto baking sheet.
5. Bake 18–22 minutes until set.
6. Cool slightly before serving.
Notes
Use ripe bananas for best sweetness.
Great for freezing and meal prep.
