Description

These Baked Peach Cinnamon Cottage Cheese Breakfast Bowls 🍑✨ are creamy, high-protein, and lightly sweet with golden peaches baked into a cozy cinnamon base. Each spoonful tastes like warm cheesecake meets peach cobbler — perfect for a nourishing breakfast or healthy dessert.

Ingredients

Scale

1 cup cottage cheese

2 large eggs

2 tbsp honey or maple syrup

1 tsp vanilla extract

½ cup oat flour (or finely blended oats)

½ tsp baking powder

½ tsp ground cinnamon

1 large peach, thinly sliced (fresh or frozen)

Pinch of salt (optional)

Extra cinnamon for topping

Instructions

1. Preheat your oven to 350°F (175°C). Lightly grease two oven-safe ramekins or small bowls.

2. In a blender or mixing bowl, combine cottage cheese, eggs, honey (or maple syrup), and vanilla extract. Blend until smooth and creamy.

3. Stir in the oat flour, baking powder, cinnamon, and a pinch of salt. Mix until fully combined.

4. Pour the mixture evenly into the ramekins. Gently press a few peach slices into each bowl and sprinkle with a little extra cinnamon.

5. Place ramekins on a baking sheet and bake for 25–30 minutes, or until the tops are golden and the centers are just set.

6. Remove from the oven and let cool slightly before serving. Enjoy warm or chilled with a drizzle of honey and extra peach slices on top!

Notes

• Use small-curd cottage cheese for the smoothest texture.

• For dairy-free: substitute cottage cheese with vegan Greek-style yogurt.

• Frozen peaches work great! Just thaw and pat dry before baking.

• Add a sprinkle of granola or nuts on top for extra crunch.

• These bowls store beautifully in the fridge for up to 4 days or freeze for 2 months — perfect for meal prep.
