Description

Soft, cinnamon-spiced, bite-sized baked fritters loaded with diced apple and finished with a sweet apple cider glaze. No deep frying and ready in about 25 minutes.

Ingredients

Scale

For the bites: 1 1/2 cups all-purpose flour

2 teaspoons baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 cup (57 g) unsalted butter, melted

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1/2 cup unsweetened applesauce

1 cup finely diced apple (about 1 medium apple), peeled

For the glaze: 1 cup powdered sugar

3 tablespoons apple cider or apple juice

Instructions

1. Preheat the oven to 400°F. Line a baking sheet with parchment paper or spray it with nonstick spray.

2. Whisk the flour, baking powder, salt, cinnamon, and nutmeg together in a medium bowl.

3. In a large bowl, whisk the melted butter, sugar, egg, vanilla, and applesauce until smooth.

4. Stir the dry ingredients into the wet ingredients until just combined, then fold in the diced apple.

5. Drop tablespoon-sized mounds of batter onto the baking sheet, about 2 inches apart.

6. Bake for about 10 minutes, until the bites are golden around the edges.

7. While the bites bake, whisk the powdered sugar and apple cider into a thin glaze.

8. Brush half the glaze over the warm bites. For an extra-glossy finish, broil for 1 to 2 minutes, watching closely, until the tops lightly brown.

9. Brush on the remaining glaze and let the bites cool until the glaze hardens.

Notes

Based on the published baked apple fritter bite method (tablespoon mounds baked at 400°F for about 10 minutes, then brushed with an apple cider glaze). Flour, sugar, butter, and glaze amounts were developed for Poulef. Test the first batch.

Dice the apple very small so the bites hold together.

Store leftovers in an airtight container for up to 3 days. Reheat in a 350°F oven for 5 to 10 minutes.
