Description

Warm and comforting Baked Apple Cinnamon Cottage Cheese Breakfast Bowls made with cottage cheese, apples, oats, cinnamon, egg, and maple syrup. An easy protein-rich breakfast perfect for cozy mornings.

Ingredients

Scale

1 cup cottage cheese

1 medium apple, peeled and diced

1/2 cup old-fashioned rolled oats

1 large egg

2 tbsp maple syrup

1 tsp ground cinnamon

1 tsp vanilla extract

1/2 tsp baking powder

Instructions

1. Preheat the oven to 375°F (190°C) and lightly grease two small oven-safe baking dishes or ramekins.

2. Peel and dice the apple into small pieces.

3. Combine the cottage cheese, egg, maple syrup, vanilla extract, cinnamon, and baking powder in a mixing bowl.

4. Fold in the rolled oats and diced apple until evenly combined.

5. Divide the mixture between the prepared baking dishes.

6. Bake for 25–30 minutes, or until the center is set and the top is lightly golden.

7. Allow the breakfast bowls to cool for a few minutes before serving.

8. Serve warm with maple syrup, chopped nuts, Greek yogurt, or extra cinnamon if desired.

Notes

Use a sweet, firm apple such as Honeycrisp, Gala, or Fuji.

Blend the cottage cheese first if you prefer a smoother texture.

Do not overbake, as this can make the cottage cheese dry.

Add chopped walnuts or pecans for extra crunch.

Store covered in the refrigerator for up to 4 days.

Reheat individual portions in the microwave for 30–60 seconds.
