Description

A tender, buttery cake made with all-purpose and almond flour, folded with diced apples, topped with a generous layer of sliced almonds, and lightly spiced with cinnamon.

Ingredients

Scale

1 cup (125 g) all-purpose flour

1/2 cup (50 g) almond flour

1 teaspoon baking powder

1/4 teaspoon salt

1 teaspoon ground cinnamon

1/2 cup (113 g) unsalted butter, softened

3/4 cup (150 g) granulated sugar

2 large eggs, at room temperature

1/2 cup milk

1 teaspoon vanilla extract

1/2 teaspoon almond extract

2 medium firm apples, peeled, cored, and diced (about 2 cups)

1/2 cup sliced almonds

1 tablespoon sugar, for sprinkling

Instructions

1. Preheat the oven to 350°F (175°C). Grease a 9-inch springform pan and line the bottom with parchment.

2. Whisk the all-purpose flour, almond flour, baking powder, salt, and cinnamon in a bowl.

3. In a large bowl, beat the butter and 3/4 cup sugar until pale and fluffy, about 3 minutes. Beat in the eggs one at a time, then the vanilla and almond extract.

4. Add the flour mixture in two additions, alternating with the milk, and mix until just combined. Fold in the diced apples.

5. Spread the batter in the pan. Scatter the sliced almonds over the top and sprinkle with 1 tablespoon sugar.

6. Bake for 45 to 50 minutes, until golden and a toothpick inserted in the center, away from the apple pieces, comes out clean.

7. Cool in the pan for 15 minutes, then release the springform and cool until just warm before slicing.

Notes

Original Poulef recipe adapted from published pear and almond cakes (such as Pastry & Beyond and The Easy Edit), with firm apples used in place of pears, combining fruit, almond flour, and sliced almonds in a springform cake. Exact amounts were not all readable from the sources, so quantities follow standard cake proportions and the recipe has not been tested.

Use firm baking apples such as Honeycrisp, Granny Smith, or Gala.

Toast the sliced almonds briefly for extra flavor if you like.
