Description

A cozy single-serving baked oatmeal with juicy cinnamon apples and warm apple pie spice, baked in an oven-safe bowl until soft and cake-like.

Ingredients

Scale

1/2 cup (47 g) old-fashioned rolled oats

1 small apple, peeled and diced (about 1/2 cup)

1 large egg

1/4 cup (60 ml) milk of choice

1 tablespoon maple syrup

1/2 teaspoon baking powder

1/2 teaspoon ground cinnamon

1/8 teaspoon ground nutmeg

1/2 teaspoon vanilla extract

Pinch of salt

Instructions

1. Preheat the oven to 350°F (175°C). Lightly grease a single-serving oven-safe bowl or ramekin (about 1 1/2 cups).

2. In a small bowl, whisk the egg, milk, maple syrup, and vanilla until smooth.

3. Stir in the oats, baking powder, cinnamon, nutmeg, and salt until combined.

4. Fold in most of the diced apple, saving a few pieces for the top.

5. Pour the mixture into the prepared bowl and scatter the remaining apple on top.

6. Bake for 20 to 25 minutes, until the center is set and a toothpick inserted in the middle comes out clean.

7. Cool for 5 minutes. Serve warm, topped with a drizzle of maple syrup, yogurt, or chopped nuts if you like.

Notes

Based on published single-serving apple pie baked oats recipes, including the egg-based version from That Spicy Chick (an egg, baking powder, cinnamon, salt, oats with apple, and a 350°F oven for 20 to 25 minutes until a toothpick comes out clean are from the source). Most single-serving versions use about 1/2 cup of rolled oats and one small to medium diced apple. The exact amounts of milk, maple syrup, nutmeg, and vanilla, the use of a whole egg, the bowl size, and the yield of 1 serving are estimates based on standard baked oats recipes, and the recipe has not been tested.

Use an oven-safe bowl, ramekin, or small baking dish.

The oats will look soft and slightly wobbly when they first come out. They firm up as they cool.

Nutrition is an approximate estimate for the whole single serving.
