Description
Mini cinnamon apple donuts made from a quick batter with shredded apples, cooked in a waffle iron, and dipped in a sweet vanilla glaze for all the flavor of an apple fritter without frying.
Ingredients
For the waffle donuts: 1/2 cup (62 g) all-purpose flour
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 tablespoons granulated sugar
1 teaspoon baking powder
1/4 teaspoon salt
1 tablespoon cornstarch
1 large egg
1/3 cup (80 ml) milk
1/2 tablespoon oil
1 1/2 cups shredded apples
For the glaze: 2 cups (240 g) powdered sugar
3 to 4 tablespoons milk
1/2 teaspoon vanilla extract
Cinnamon sugar, for sprinkling (optional)
Instructions
1. Heat a waffle iron and spray it generously with non-stick cooking spray.
2. In a large bowl, whisk together the flour, cinnamon, nutmeg, sugar, baking powder, salt, and cornstarch.
3. In a small bowl, whisk the egg, milk, and oil. Pour into the dry ingredients and stir until just combined.
4. Fold in the shredded apples.
5. Drop the batter by the tablespoon onto the waffle iron and close the lid. Cook for 3 to 5 minutes, depending on the heat of your iron, until golden and set.
6. Transfer the waffle donuts to a wire rack and let them cool slightly. Repeat with the remaining batter, re-spraying the iron as needed.
7. Whisk the powdered sugar, 3 tablespoons of the milk, and the vanilla in a shallow bowl until smooth, adding more milk a little at a time until the glaze is thick but dippable.
8. Dip each donut in the glaze, sprinkle with cinnamon sugar if you like, and let the glaze set on the rack.
Notes
Adapted from the Glazed Apple Fritter Waffle Donuts by Inside BruCrew Life (mini version, 24 donuts), using the batter and glaze quantities listed in a reposted copy of the recipe. Batter and glaze amounts, the 3 to 5 minute waffle iron time, and the yield of 24 mini donuts follow that listing. The prep time and the total cook time across batches are estimates, and the recipe has not been tested.
Waffle iron size and heat vary, so watch the first batch and adjust the cooking time.
Honeycrisp or Granny Smith apples work well.
Nutrition is an approximate estimate per donut (24 mini donuts), assuming about half of the glaze clings to the donuts.
