Ingredients
3 cups (375 g) all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
2 teaspoons ground cinnamon
1½ cups (360 ml) vegetable oil
2 cups (400 g) granulated sugar
3 large eggs
2 teaspoons vanilla extract
3 cups (375 g) peeled and diced apples
1 cup (120 g) chopped pecans or walnuts (optional)
For the Caramel Glaze:
½ cup (113 g) unsalted butter
1 cup (220 g) packed brown sugar
¼ cup (60 ml) milk
1 teaspoon vanilla extract
Instructions
1. Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan or a 12-cup Bundt pan.
2. In a large bowl, whisk together the flour, baking soda, salt, and cinnamon.
3. In a separate bowl, whisk together the vegetable oil, granulated sugar, eggs, and vanilla extract until smooth.
4. Add the dry ingredients to the wet ingredients and mix just until combined.
5. Fold in the diced apples and chopped nuts, if using.
6. Spread the batter evenly into the prepared pan.
7. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
8. Meanwhile, prepare the caramel glaze by combining the butter, brown sugar, and milk in a saucepan over medium heat.
9. Bring to a gentle boil and cook for 3-5 minutes, stirring constantly.
10. Remove from heat and stir in the vanilla extract.
11. While the cake is still warm, pour the warm caramel glaze evenly over the cake.
12. Allow the glaze to soak into the cake for 15-20 minutes before slicing and serving.
Notes
Use firm apples such as Honeycrisp, Granny Smith, or Fuji for the best texture.
Pour the caramel glaze over the cake while it is still warm so it absorbs into the crumb.
This cake tastes even better the next day as the flavors deepen.
